Customer Rating: Summary: This Sitram Catering 5.4 qt. pot is a terrific stewpot Comment: This stewpot/braisier is an outstanding pot. I own it and use it every week. The size is very useful for a family. The pot has a thick copper core sandwiched between layers of stainless steel and is very responsive to temperature changes. Cleaning the pot is a snap in the dishwasher. If by chance something sticks, a little soak with hot, soapy water first does the trick.
Sitram Catering Stainless Steel pots and pans are extremely high quality. They are used by professional cooks in France who do not put up with inferior equipment.
I own a number of sauciers, saucepans, frying pans and pots from the Catering line and heartily recommend them all.
1/16/08 Update: I do wish the prices on the Catering line had not risen as much as they have. The prices are on par with other high quality lines but the prices are no longer the great deal they used to be.
Customer Rating: Summary: Great pot for large items! Comment: This pot is great for soups, corn on the cob and pasta. It is large enough for a big family. I have several other Sitram catering pans and I love their quality and cooking performance. Dishwasher safe too!
Customer Rating: Summary: The best Comment: I was very apprehensive about buying this pot because the description says it's a 5.4qt pot, and 5.2" high. This conflicts w/ my old-old Sitram info that says it's supposed to be 7.4qts and 6.3" high. However, there was an interim distributor that did describe it as a 5.4qt pot. As it turns out, the pot really is 7.4qts, and about 6+" high (interior) - just what I wanted.
It's now been 30+ years since I became serious about cooking. Over the years, I've owned sets of Calphalon (anodized), All-Clad and Cuisinart, but they all had/have faults that I found unacceptable. Eventually, I settled on the Sitram Catering line for my cookware arsenal. For me, the Sitram Catering line is the best with the least faults at an affordable price.
I do still use black steel frypans (Bourget) because I can get them really hot without fear of warping; and LeCreuset pots for those stews and slow braises. And my faithful woks, of course.
Customer Rating: Summary: Reliable all-around pot Comment: Cooking pasta or soup, making a small batch of stock or broth, or finishing sauce coming off a chinois or a mafter exoglas or whenever you need a higher sided pot, this delivers!
Of course you can always buy a cheaper 6 quart stainless steel with aluminum bottom stock pot but you won't get the built like a tank like quality that this copper bottom pot can offer. I expect this pot will last a lifetime.

French manufacturer Sitram produces commercial-grade, stainless-steel cookware for restaurant, hotel, and institutional kitchens worldwide--serious home cooks also use this cookware to advantage. On the Inox line's pot and pan bottoms, a disk of copper--cookware's best heat conductor--sheathed in steel conducts heat rapidly and uniformly. Sitram cookware goes safely into ovens and under broilers, and, designed to withstand rough treatment, its bright, shiny appearance lasts indefinitely. The bottoms don't warp, and this cookware is stain- and corrosion-resistant. And with no inside rivets to clean around, it scrubs up hygienically and painlessly. This is cookware for cooks who value heavy, bang-around durability over fancy design. Braisiers, such as this one, offer versatility. In the oven or on top the stove and covered with a lid (sold separately), this pan serves as a casserole to stew or braise meats, poultry, seafood, or vegetables. Popular for browning meats and rapidly reducing sauces and broths, it's also a sauté pan, a deep-frying pan, and a double-handled saucepan large enough (9.4 inches in diameter by 9-1/2 inches high) to handle most home-kitchen tasks. --Fred Brack
